The flavors in this coconut shrimp curry are so good together. The shrimp are cooked in a creamy coconut curry sauce with fragrant spices. Its quick and easy to make, and it tastes great for dinner during the week
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 red bell pepper, sliced
- 1 can 14 oz coconut milk
- 2 tbsp curry powder
- 1 tbsp fish sauce
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
In a large skillet, heat coconut oil over medium heat
Add onion, garlic, and ginger
Saut until fragrant, about 2 minutes
Add bell pepper and cook for another 2 minutes
Stir in curry powder and cook for 1 minute
Pour in coconut milk and fish sauce
Bring to a simmer
Add shrimp and cook until pink and opaque, about 5 minutes
Stir in lime juice and season with salt and pepper
Garnish with fresh cilantro before serving
Serve hot over rice or noodles
