This summer farro salad is bursting with fresh flavors and textures. The chewy farro, juicy cherry tomatoes, crisp cucumber, and tangy feta cheese are all brought together with a simple vinaigrette. Its perfect for picnics, potlucks, or as a light and satisfying meal on its own.
Ingredients:
- 1 cup farro, cooked
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
Cook the farro and put it in a large bowl
Add the cucumber, red onion, cherry tomatoes, basil, parsley, and feta cheese
Add extra virgin olive oil and balsamic vinegar on top
Toss the salad ingredients together gently to coat them with the dressing
Add pepper and salt to taste
