Grilled Salmon Ciabatta Sandwiches

These grilled salmon ciabatta sandwiches with arugula, avocado, and pesto are a tasty and healthy way to fill up. The salmon that has been grilled adds a smokey flavor that goes well with the creamy avocado and tangy pesto. You can make this fancy sandwich at home without much trouble.

Ingredients:

  • 4 salmon fillets
  • 4 ciabatta rolls
  • 2 cups arugula
  • 2 ripe avocados, sliced
  • 1/2 cup pesto sauce
  • 4 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Warm up the grill over medium-high heat

Add salt and pepper to the salmon fillets and brush both sides with olive oil

The salmon fillets should be cooked all the way through and have grill marks after being grilled for about 4 to 5 minutes on each side

Take it off the heat and set it aside

Split the ciabatta rolls in half and toast them on the grill for a minute or two

On the cut sides of each ciabatta roll, spread a lot of pesto sauce

On the bottom half of each roll, put a handful of arugula

A grilled salmon fillet should be put on top of the arugula

Place avocado slices on top of the salmon

Put the top half of the ciabatta roll over it

Serve right away and enjoy
