Paleo Ranch Chickpea Pasta Salad

A delicious and healthy pasta salad made with chickpea pasta and a paleo-friendly ranch dressing. Its a perfect dish for a quick and satisfying Paleo meal.

Ingredients:

  • 8 oz chickpea pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup paleo-friendly ranch dressing

Instructions:

Cook the chickpea pasta according to package instructions until al dente

Drain and rinse with cold water

In a large mixing bowl, combine the cooked chickpea pasta, cherry tomatoes, diced cucumber, and chopped red onion

Pour the paleo-friendly ranch dressing over the salad ingredients

Gently toss everything together until well coated with the dressing

Chill the salad in the refrigerator for at least 30 minutes before serving
