Ingredients:
- 8 oz spaghetti
- 2 cups cherry tomatoes, halved
- 2 cups fresh spinach leaves
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Preheat the oven to 400F 200C
Toss halved cherry tomatoes with 1 tablespoon of olive oil, minced garlic, salt, and pepper on a baking sheet
Roast in the preheated oven for 15-20 minutes, until tomatoes are slightly caramelized
While the tomatoes are roasting, cook spaghetti according to package instructions until al dente
Drain and set aside
In a large skillet, heat the remaining olive oil over medium heat
Add spinach and cook until wilted
Reduce heat to low and stir in heavy cream and Parmesan cheese until well combined and creamy
Add cooked spaghetti to the skillet and toss until evenly coated with the creamy spinach sauce
Gently fold in the roasted tomatoes
Serve hot, garnished with fresh basil leaves
