Twice-Baked Sweet Potatoes with Chipotle Pecan Streusel

Gay Hookups Lake Charles

The flavors of Twice-Baked Sweet Potatoes with Chipotle Pecan Streusel go well together because they are sweet, spicy, and crunchy. Adding chipotle peppers to the creamy sweet potato filling makes it taste even better. A crunchy pecan streusel on top adds texture and richness.

Ingredients:

  • 4 large sweet potatoes
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 chipotle pepper in adobo sauce, minced
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour

Instructions:

Preheat oven to 375F 190C

Scrub sweet potatoes and pierce with a fork several times

Place on a baking sheet and bake for 45-60 minutes, or until tender

Let sweet potatoes cool slightly

Cut in half lengthwise and scoop out the flesh, leaving a thin layer inside the skin

In a mixing bowl, mash the sweet potato flesh with butter, brown sugar, chopped pecans, minced chipotle pepper, cinnamon, and salt

Spoon the mixture back into the sweet potato skins

In a separate bowl, combine flour and additional brown sugar

Cut in butter until mixture resembles coarse crumbs

Stir in pecans

Sprinkle streusel mixture over the filled sweet potatoes

Return sweet potatoes to the oven and bake for an additional 15-20 minutes, or until streusel is golden brown

Serve hot and enjoy
