Gluten-Free Tomato Feta Pizza with Quinoa Crust

You can enjoy the taste of fresh tomatoes, tangy feta cheese, and fragrant basil on a gluten-free quinoa crust that is crispy. This pizza is great for people who are sensitive to gluten or who want a healthier alternative to regular pizza crusts.

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup tomato sauce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, torn
  • Salt and pepper to taste

Instructions:

Preheat oven to 425F 220C

In a medium saucepan, bring the water to a boil

Add quinoa and salt

Reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is cooked and water is absorbed

Transfer cooked quinoa to a bowl

Let it cool slightly

Add olive oil to the quinoa and mix well

Line a baking sheet with parchment paper

Press the quinoa mixture onto the parchment paper, forming a thin crust

Bake the crust for 15 minutes, or until edges are golden brown and crisp

Remove crust from the oven and spread tomato sauce evenly over the surface

Arrange cherry tomato halves on top of the sauce, followed by crumbled feta cheese

Return the pizza to the oven and bake for an additional 10 minutes, or until cheese is melted and bubbly

Sprinkle torn basil leaves over the pizza and season with salt and pepper to taste

Slice and serve hot
