In a crispy toasted shell, this recipe for a breakfast or brunch burrito combines the tastes of salsa, eggs, beans, creamy avocado, and melted cheese. This is a great quick and hearty meal.
Ingredients:
- 1 toasted shell tortilla or bread
- 2 eggs
- 1/4 cup salsa
- 1/4 cup cooked beans
- 1/4 avocado, sliced
- 1/4 cup shredded cheese cheddar or your choice
- Salt and pepper to taste
Instructions:
Set a skillet that doesnt stick on medium heat
Put the eggs in the pan and cook them until theyre done the way you like them
Add pepper and salt
Toast the shell and put it on a plate
Cover the whole shell with salsa
On top of the salsa, put the cooked eggs
Place the cooked beans on top of the eggs
Put slices of avocado on top of the beans
Add some shreds of cheese to the avocado
You can melt the cheese by heating the ingredients together in the microwave for 20 to 30 seconds if you want to
You can either fold the shell in half or roll it up like a burrito
